Crusts can be overated…

As chance would have it we ended up staying home today – which meant I got to try out my first veg box inspired recipe… well, two recipe’s actually.

The main event was a Kale & Feta Crustless Quiche:

I made the salad dressing from the linked recipe as well – added some honey though as it was a bit too sharp initially.

Overall it turned out pretty good! I used skimmed milk for the quiche because it is all we had – full fat or half n half would definitely have been better but it wasn’t a deal breaker. I also used just normal balsamic vinegar in the dressing (instead of white like the recipe says – I didn’t notice that till I was making it!) which is probably why it was too sharp. One thing I would say is neither of us could particularly taste the feta – but I don’t know what it would have been like without it. I did use Apetina – which is pretty mild tasting to start with.

Things I used from the veg box:

  • Green Kale
  • Red Pepper
  • Onions
  • Lettuce
  • Clementine x2

Things I’d change? Well, I’d definitely use full fat milk and dial down the acid in the dressing at least. I would also add something else on the side for a bigger, more filling dinner. Maybe a bread roll or a few new potatoes.

Things I learned? Finely chopped kale is very very messy when you tip over the bowl by accident… and grating mozarella is a stupid thing to do.

Both M and I gave it a 6/10 and we are taking the leftovers to work for lunch tomorrow which I don’t think is bad for a first go… especially as it was a totally vegetarian dinner which is not ‘normal’ for us. Actually, it would probably be nice to add some bacon to that quiche. I was aiming for a more healthy option by ommiting the crust – I also don’t know how to make one or happen to have a store bought version kicking around in the cupboard!

Got to think of something to make for tomorrows dinner now!!

 

P.S. I’ve eaten / drank Kale two ways now – and M is going to have a go at the kale colcannon recipe too. Who knew kale would be our most used veg box ingredient?!!
